I don't see it that way. It's simply an admission that people use * in plaintext for emphasis, and that there is a pretty straightforward way to make a markup that shouldn't interfere with people's text. It's really only important if people are turning existing files into gmi files, I would think.  It fits the Gemini "philosophy" of determining the line type unambiguously in first 3 chars.

I've dreamed of a wiki-native protocol as well, but Gemini ain't trying to be it. There are several servers as I understand that just serve markdown, too. You can use one of those, as was suggested.
